Stir fried beef and broccoli

2 Tbls. Soy sauce 1/2 tsp. salt 1Tbls. Pale dry sherry 1/2 cup oil 1/2 lb. lean beef (lamb or nilgai will do as well) very thinly sliced 1 Tbls. Red wine vinegar 1 Tbls. Sesame oil 1/2 tsp. black pepper 2 cloves garlic, mi need 2 bunches green onions Mix together 1Tbls. Of the soy sauce, the salt, sherry, and 2 Tbls. Of the oil. Add the meat slices amd leave to marinate for 5 minutes. Mix the remaining soy sauce with the vinegar, sesame seed oil and pepper in a small bowl. Heat the remaining oil in a pan. Add the garlic and stir-fry for 10 seconds. Add the meat and stir-fry until browned. Shred a few of the green onions and set aside for garnish. Cut the remainder into 2 inch pieces and add to the meat together with the vinegar mixture. Stir-fry for a few seconds. Serve hot, garnished with the reserved green onions. Serve over steamed rice. This is the basic recipe. We have made changes to it. We use at least a pound of meat, sometimes 2 pounds. We also add snow peas, carrots cut very small, and broccoli. We change the measurements of all the liquids to 1/3 to 1/2 of a cup for each liquid to make enough sauce. Be creative. This is just a basic recipe. Enjoy.
